Next, we’ll head up the hill to the Utah State Capitol.
This building is an architectural masterpiece. It sits majestically overlooking the entire valley.
The structure is made of gleaming Utah granite and Georgian marble.
Inside, you’ll find a grand rotunda and beautiful murals. They depict scenes from Utah’s rich history.
The Capitol Building is open to the public seven days a week. You can take a free guided tour. They run hourly from 10:00 AM to 3:00 PM on weekdays.

11:30 AM – Hike to Ensign Peak
Just a five-minute drive from the Capitol is a hike you can’t miss.

The trail is about one mile round trip. It has an elevation gain of around 400 feet. It’s an easy hike that most people can do in under an hour.

This place is famous for its killer Mexican food that’s worth the wait!. They are best known for their complex and delicious mole sauces.
They offer several varieties, from rich and nutty to spicy and sweet. The atmosphere is always buzzing.
Be warned: there is almost always a line. I’d suggest making a reservation online through Resy to skip the long wait.
Option 2: Pretty Bird Hot Chicken (The Contender)
For something more modern, head to Pretty Bird.
Founded by acclaimed Chef Viet Pham, this spot serves Nashville-style hot chicken.
The fried chicken sandwich is legendary. It’s perfectly crispy, juicy, and spicy. You can choose your heat level, from mild to “hot ‘behind’.”
The cider slaw and pickles cut through the richness perfectly.
With multiple locations, it’s a convenient and delicious choice.

The “Past Worlds” exhibit is a must-see. It features an incredible collection of dinosaur fossils unearthed in Utah.
Right next door is Red Butte Garden, the state’s official arboretum. It features over 100 acres of display gardens and natural areas. You can wander through themed gardens.
There are also miles of peaceful walking paths. It’s a beautiful place to relax and enjoy nature. Both venues have separate admission fees and are open daily.
